At MÉZ we seek to rediscover the cuisines connected by the Indian Ocean that shaped the world and changed food history.

By 1 CE, a maritime trading route of 9000 miles stretched from Rome, across the Mediterranean to northern Africa, through the Indian Ocean to Indonesia and on to China, with India at its centre.

Ultimately, Vasco da Gama found the route around Africa to the spices of Southeast Asia in the 15th century, and a spice empire with its hub in Goa radiated out across the Indian Ocean from eastern Africa to Indonesia.

Indian merchants took Indian cuisine to Southeast Asia, notably Malaysia and Indonesia, where spice mixtures and black pepper became popular. Conversely, Southeast Asian cuisine was introduced to India and Sri Lanka, where rice cakes and coconut milk-based dishes remain dominant.

Imagine the grandeur of the Indian Ocean’s maritime route by the 1st century CE, where a trading path spanning over 9000 miles connected the thriving civilizations of Rome, the Mediterranean, Northern Africa, Indonesia, and China. India, at the heart of this network, played a pivotal role in the exchange of cultures, spices, and culinary traditions.

The 15th century brought a momentous shift, as Vasco da Gama unveiled a new route around Africa, leading to the discovery of the treasures of Southeast Asia. Goa became the hub of a spice empire that radiated its influence across the Indian Ocean, from the eastern coast of Africa to the exotic islands of Indonesia.

The legacy of this maritime world can be traced through the flavours that have travelled far and wide. Indian merchants brought the vibrant aromas and tastes of their cuisine to Southeast Asia, particularly to Malaysia and Indonesia. In these regions, Indian spice blends and the allure of black pepper quickly became popular staples, leaving an indelible mark on their culinary landscape.

Conversely, the influence flowed in the other direction as well. Southeast Asian cuisine introduced its own delightful flavours to India and Sri Lanka, where dishes featuring rice cakes and coconut milk-based creations remain dominant.

At MÉZ, we celebrate this rich and diverse legacy of the Indian Ocean. Our commitment is to offer you a culinary experience that’s deeply rooted in tradition and intertwined with the freshest seafood from the crystal-clear waters of St Julians, Malta.
